This quarantine is pushing us to use all things in the pantry, save money, cook fancy at home and eat healthily. This recipe will save you in this summer days and it creates zero waste.
Gazpacho is a Spanish refreshing chilled soup. The ingredients are simple and seasonal. This immunity-boosting recipe uses things from the Indian pantry. The economy is in a slow down and our fancy cooking budget is shrinking. This was the inspiration to create a recipe that avoids wastage. Also feel free to use vegetables that are at home like squash, watermelons, beets or carrots.

List of Ingredients
3 Tomatoes - Rich in antioxidants.
1 large Onion or 5 Spring Onions - Rich in Flavonoids and Anti-viral properties.
2 Capsicum (do Bell Peppers if you have) - Packed with vitamins
1 Cucumber - Hydration for summer, Manganese, Potassium, and essential to maintaining a good immune system
5 cloves of Garlic - King of Immunity
1 chilli - Anti-Fungal properties and vitamin A to maintain healthy respiratory system.
1 crusty bread
- Cream if not Vegan
- Roasted tomatoes
- Boiled Eggs if following a High Protein Diet
Add all ingredients and herbs in a bowl. Toss and mix with the seasoning.
Refrigerate it for 30 minutes to overnight.
Add them to a blender and whiz.
Check the consistency and add oil or seasoning accordingly.
Serve straight away or freeze for later use. Garnish with herbs, caramelized onion, roasted cherry tomatoes or have it directly.
